Product made with a blend of chopped and minced raw pork meat and streaky bacon, with additional salt, spices and authorised additives, kneaded and stuffed into natural beef casing, which has undergone an ageing process
- TEXTURE: Firm consistency and compact to the touch, but soft when cut.
- COLOURING AND ASPECT WHEN CUT: Homogenous, smooth and well bound cut, without anomalous colours and with a net difference between fragments of meat and lard. Cured pink colour in the meat and white in the fat. External aspect is white, due to the beneficial presence of surface mould.
- AROMA AND FLAVOUR: characteristic, provided primarily by the spices and condiments, together with the curing process.
