Minced and blended pork meat and lard. This blend is seasoned with salt, paprika and other spices and condiments, kneaded and stuffed in natural casing, which has undergone an aging-drying process with smoke, which is characterised by its red colour and its characteristic smell and flavour.

- COLOURING AND ASPECT WHEN CUT: Homogenous, smooth and well bound cut, without anomalous colours and with a net difference between fragments of meat and lard.
- AROMA AND FLAVOUR: characteristic, provided primarily by the spices and condiments, together with the curing process.
