Hind legs from adult Duroc breed pigs. The meat from Duroc pigs has a very good
fat infiltration, which makes it perfect for ham processing. It stands out for its low
salt content (25% less) and its sweet flavor.
Product elaborated following the traditional Galician artisan process of salting and
curing. The end result is a Serrano Ham with a uniform and homogeneous
consistency, with a round cut and without a leg, but with a smooth skin.
- TTEXTURE: Homogeneous, not very fibrous and without pastiness or
softening. Optimum fat infiltration thanks to its Duroc genetics.
- COLORATION AND APPEARANCE ON CUTTING: Characteristic color
from pink to purple red in the lean part and shiny appearance of the fat.
Homogeneous when cut.
- FLAVOR AND AROMA: Meat with a delicate flavor, low in salt and with a
pleasant and characteristic aroma.
